大豆“壅热伤脾”机理与大鼠大肠硫化物数量的关系研究

     摘要:目的采用大鼠代谢试验方法以粪硫化物为指标研究高蛋白食物壅热伤脾机理。方法按配伍组设计方法将24只雄性SD大鼠随机分成豆组和肉组。每组动物先后饲以4个实验水平的大豆、肉类混合饲料,每一水平喂养8 d共32 d的实验膳食。收集大鼠第7,8天粪便,应用亚甲蓝方法通过微蒸馏过程测定粪硫化物含量。结果①豆组鼠粪硫化物浓度均数(0.27±0.14)μmol/g(P <0.05);从10%~90%的浓度范围内,随饲料中大豆比例的增加,粪便中硫化物的浓度增加,呈正相关关系。②肉组大鼠粪硫化物浓度均数(0.19±0.11) μmmol/g(P>0.05)。③肉豆组间比较,肉和大豆在饲料中的比例大于70%时,粪硫化物浓度豆组大于肉组(P <0.05)。结论当肉、豆在食物中的比例相同时,高剂量下,大豆引起大鼠大肠硫化物的产生量更多,肠道毒性更大。

    Effect of Soybean Protein on Sulfide Production in The Large Intestine in Rats

    Abstract:ObjectiveTo assess the relation between dietary soybean or meat intake level and fecal sulfide concentration. Methods24 adult male SD rats were randomly divided into soybean group and meat group according to randomized block design. In each group, six couple of rats were fed a sequence of 4 diet for 8d each. A partially randomized crossover design was used with four 8-d diets within 32d. On day 7 and 8 of each diet period, all faces of each cage were respectively collected, weighed for further analysis. Hydrogen sulfide was collected from the precipitate by a microdistillation procedure. We used the modified methylene blue method as the basis for total fecal sulfide determination. Results ① In soybean group, mean fecal sulfide concentration was (0.2±0.1)μmol/g (P<0.05). Mean fecal sulfide concentration in soybean group have positive correlation with dietary soybean proportion from 10% to 90% test level. ② In meat group, mean fecal sulfide concentration was (0.19±0.11)μmol/g (P>0.05). ③ The contribution to fecal sulfide concentrition of soybean group is more than that of meat group in high test level(>70%) of daily intake. ConclusionThe high quantity of soybean intake contributes to the larger output of sulfide production in the large intestine in rats than the pork meat intake at the same proportion. The more output of sulfide production, the more harmful to the large intestine mucosa. ......
