发酵调味品的营养价值(1)

     【摘要】人体所需的营养素有五大类:蛋白质、脂类、碳水化合物、矿物质、维生素。我国是酿造调味品的故乡,酱油、粮食醋、豆酱、腐乳等调味品都诞生于我国。可是在不少人的观念中,调味品是食品中最小的门类,其营养价值微不足道。事实上,很多调味品中都含有人体所需的营养素,它在赋予食品独特风味的同时,也以自己的营养和保健作用为人类造福。本文把家庭中常用发酵调味品的营养价值做一简单介绍。

    【Abstract 】Essential nutrients are five main categories: proteins, lipids, carbohydrates, minerals, vitamins. China is the home of brewing spices, soy sauce, grain vinegar, soy sauce, fermented bean curd and other spices are born in our country. But in many people's minds, spices are the smallest categories of food, its nutritional value is negligible. In fact, many spices contain essential nutrients, it gives food a unique flavor, but also to their role in nutrition and health for the benefit of mankind.
