    【摘 要】食品安全事关百姓的健康，涉及到每个人的切身利益，本文概述了食品安全现状。笔者结合在疾控机构理化检验部门的食品检验工作实践，分析了卫生理化检验在食品安全、分析与检测中的重要性，现代仪器分析技术在食品理化检验中的应用，切实指出了当前食品理化检测中存在的问题并提出了相应发展建议。
