【摘 要】 目的：鉴别12种市售工业明胶和食用明胶原料胶囊。方法：采用外观性状鉴定、崩解度时限、五氯苯酚含量、铬含量测定的综合鉴定方法。结果：12种胶囊样品中非正规样品8号、10号中五氯苯酚、铬的含量明显高于其他胶囊；外观性状颜色鲜艳，不平整，质硬易碎；崩解度较小。结论：可以通过性状-崩解度-五氯苯酚-铬含量测定的综合方法来鉴别工业明胶和食用明胶胶囊。
