食用菌的活性成分及其安全检测分析研究

摘 要:食用菌是很多活性成分的重要来源,包括多糖、蛋白质、萜类、矿物质和维生素。目前,有研究证明食用菌及其活性成分具有潜在的抗肿瘤、抗氧化、免疫活性,可用于临床疾病治疗。然而,在食用菌实际生产过程中面临的安全问题,阻碍了食用菌产业的绿色发展,因此更新食用菌的安全检测技术对于保障其产业健康发展有着重要的意义。本文介绍了食用菌的生物活性成分,并就其分离纯化、分析检测及结构解析等方法和手段进行概述,同时列出了食用菌的安全检测技术和方法,为相关人员提供参考。

Abstract: Edible fungi are important sources of many active components, including polysaccharides, proteins, terpenes, minerals and vitamins. At present, studies have proved that edible fungi and their active components have potential antitumor, antioxidant and immune activities, which can be used in clinical disease treatment.
