叶菜农药残留安全风险评估方法研究及应用进展

摘 要:食品安全与人们的生命健康关系密切,风险评估是食品安全的保证。叶菜是人们日常食用量较大的蔬菜种类,其在生产中极易受到农药残留的污染,因此对叶菜进行安全风险评估可避免农药残留对人们的健康造成危害。本文阐述了风险评估的基本概念,综述了近年来常用的评估方法在叶菜农药残留风险评估中的应用,简单介绍了方法的定义和表达式,并对其应用范围、应用趋势等进行分析,以供参考。
