烹饪工艺和食品营养之间的关系研究
支佳佳摘 要:我国的饮食文化历史悠久,“民以食为天”反映出人們对于食品质量和食品营养的关心。我国的饮食文化经历了原始人的生食到现代智人的熟食等不同的阶段,随着历史的变迁,人们对于食物的追求开始从吃饱变为吃好,由追求美味到追求营养和健康。饮食文化的变化反映出社会条件尤其是经济条件的改善,我国食品烹饪技术和其他国家相比较为明显的差异就是药食同源,这反映出古代饮食文化注重色香味,更注重营养的特色。
