藜麦营养和生物活性成分研究进展
刘雪 宋菁景 林小晖摘要:藜麦营养价值高、次生代谢产物丰富,具有抗氧化、抗菌抗炎、免疫应答等生理活性,能预防和治疗多种疾病。本文综述藜麦营养成分和活性物质及其营养保健功效,为藜麦在食品药品方面的开发利用提供参考。

Abstract: Chenopodium quinoa Willd. has high nutritional value and rich secondary metabolites. It has antioxidant, antibacterial and anti-inflammatory,immune response and other physiological activities, It has good curative effect on some diseases. This research introduces the nutritional components and active substances of quinoa and their effects to health, and provides reference for the development and utilization of quinoa in food and drug.
