    摘 要：黄曲霉毒素是一种由黄曲霉和寄生曲霉代谢产生的有毒次级代谢物，易对粮食及其制品造成污染。长期食用受黄曲霉毒素污染的食物与儿童生长迟缓存在关联，本文总结了大量的动物实验和流行病学研究，分析了黄曲霉毒素暴露与儿童生长迟缓的关系以及对人类健康的相关影响，为黄曲霉毒素的防控提供依据。

    Effects of Aflatoxin on Growth Retardation in Children

    Abstract： Aflatoxin is a toxic secondary metabolite produced by the metabolism of Aspergillus flavus and Aspergillus parasiticus Speare， which is easy to cause pollution to food and its products. A growing number of studies have shown that long-term consumption of food contaminated with aflatoxin in contact between children with growth retardation， this paper reviewed a large number of animal experiments and epidemiological studies， describes the aflatoxin exposure and evidence related to children’s growth retardation and the impact on human health， provide the basis for the prevention and control of aflatoxin.

    黃曲霉毒素(Aflatoxins，AFT)是由黄曲霉和寄生曲霉的某些菌株产生的一种双呋喃环类毒素，多在农作物中被检出，如花生、玉米等。黄曲霉毒素结构中含有二呋喃环和氧杂萘邻酮，具备很强的毒性、致畸性、致癌性和致突变性 ......
