    摘 要：在食品的整个腐败过程中，微生物的细菌群体感应发挥着极为重要的作用，它是导致食品变质的主要原因之一，也是当前食品保鲜技术领域的科研新“靶点”。本文以微生物群体感应系统为主要研究方向，简要概述了微生物群体感应对食品腐败过程的潜在性影响，重点分析了食品腐败中细菌群体感应现象的主要作用，并深入探究了微生物群体感应系统的具体应用策略与手段，以期为食品食用与品质安全提供良好的理论依据保障。
