食品风味分析技术研究进展
摘 要:在人们生活水平不断提升的过程中,对食品风味的需求也不断提升,食品风味研究具有重要的现实意义,因此需加强食品风味分析技术,满足人们的需求。食品风味主要是指人们的感官对于香味物质、呈味物质产生的综合感觉。在精密分析仪器的运用中,食品风味的研究方法得到了进一步的提升,这就需要加强人们对风味成分的认知,对综合因素进行分析,进行分析方法以及检测参数的选择,提升食品风味分析效果。基于此,本文对电子鼻技术、顶空分析技术、气相色谱吸闻技术、气相液相色谱技术和气相色谱–质谱联用技术等食品风味分析技术的研究进展进行了分析,希望可以提升食品工业的有效发展。关键词:食品;风味分析;技术
