摘 要：随着社会的发展，人们的生活水平不断提高，大大提升了对食品安全及健康的关注度，但仍旧存在食品重金属污染状况，有毒重金属可通过食品及食物链进入人体，对居民生命健康造成极大威胁。目前食品重金属污染检测与食品安全保障已成为重点关注问题，本文通过对食品重金属污染现状、来源及检测方法进行分析，以期为食品重金属污染预防提供参考依据。

    Abstract： With the development of society， peoples living standards have been continuously improved， which has greatly enhanced the attention to food safety and health. However， there is still heavy metal pollution in food. Toxic heavy metals can enter the human body through the food and food chain， posing a great threat to the lives and health of residents. At present， food heavy metal pollution detection and food safety assurance have become the focus of attention.
