微生物法测定蔬菜中叶酸含量

    摘 要:采用微生物法使用鼠李糖乳杆菌测定了某地区25种常见蔬菜的叶酸含量。结果显示,在当地常见蔬菜中菠菜叶酸含量最高(236 μg/100 g),西兰花(137 μg/100 g)的叶酸含量也较高。其他叶类蔬菜的叶酸含量在45~100 μg/100 g,瓜类、豆类和根茎类蔬菜的叶酸含量低于叶类蔬菜。菠菜和大白菜的叶酸在放置一周后仅保留23.0%和42.9%。

    Abstract: The folate content of 25 common vegetables in a region was determined by microbiological method using Lactobacillus rhamnosus. The results showed that spinach had the highest folate content (236 μg/100 g) among the common local vegetables and broccoli (137 μg/100 g) also had higher folate content. The folate content of other leafy vegetables ranged from 45 to 100 μg/100 g. Melons, beans and root vegetables had lower folate content than leafy vegetables. Spinach and cabbage retained only 23.0% and 42.9% of their folate after a week of sitting. ......
