    摘 要：随着经济的快速发展和人们生活水平的不断提高，对动物源性蛋白质的品质需求也在不断增加，鸡蛋因其营养佳、口感好成为动物蛋白的主要来源。近年来，我国鸡蛋的消费量逐年增加，人们也越来越关注鸡蛋的质量安全，尤其是鸡蛋中的兽药残留情况。本文介绍和分析了鸡蛋中常用兽药残留的现状以及检测技术，并从食品安全的角度提出相应的防控措施，以期为提高鸡蛋的质量、减少药物残留提供参考。
