水产品食用品质特征研究进展

摘 要:水产品营养丰富,味道鲜美,深受人们喜爱。本文从种属、养殖方式、产地、生长阶段及食用部位等角度,综述近年来鱼、虾蟹及其他典型经济水产品的营养成分和品质特征,以期为后续研究给予理论支撑,为水产品生产养殖、品质评价等工作提供参考依据,为水产资源高效利用提供思路。

Research Progress on Edible Quality Characteristics of Aquatic Products

Abstract: Aquatic products are rich in nutrition, delicious taste, and are loved by people. This review focuses on recent research on the nutritional composition and edible quality of fish, shrimp, crab and other typical economic aquatic products from the perspectives of species, culture methods, origin, growth stage and edible parts. It is expected that this review will be give theoretical support for further research, offer references for the production of aquaculture and the evaluation of quality in aquatic products, and provide ideas for efficient utilization of aquatic resources.
