摘 要：重金属是食品中常见的一类污染物，可通过食物链进入人体，对人体健康产生潜在危害。本文探讨了重金属污染的来源、毒性机理及其对人体健康的影响，并系统分析了暴露评估、剂量-反应评估和风险表征等重金属风险评估方法，同时提出了制定科学的食品安全标准、加强监管检测以及完善食品追溯体系等有效监控策略。通过全面的风险评估和有效的监控措施，为食品安全管理提供理论支撑。
