营口市虾蛄中镉膳食暴露风险评估
摘 要：本研究对营口市650个居民样本进行虾蛄膳食习惯调查，当镉含量以现行限量标准《食品安全国家标准 食品中污染物限量》(GB 2762—2022)中3.0 mg·kg-1计时，运用靶标危害系数法对营口市虾蛄中的镉进行膳食暴露风险评估。结果表明，虾蛄中镉的膳食暴露风险受年龄、性别、虾蛄公母、食用时是否去肠腺等因素影响，但靶标危害系数均小于1，不存在潜在健康风险。
