摘 要：黑米含有花青素等生物活性物质，在我国种植广泛、产量较高。本文主要简述了黑米花青素的抗氧化、抗肿瘤、抗菌、调节血脂、增强视力、保护肝脏、抗哮喘、预防动脉粥样硬化等生物活性，为黑米及黑米花青素的产品研发提供理论依据。

    Research Progress on the Bioactive of Anthocyanins in

    Black Rice

    Abstract： Black rice contains anthocyanins and other bioactive substances， which are widely cultivated in China with high yield. In this paper， the effects of black rice anthocyanins on oxidation， anti-tumor， anti-bacteria， regulation of blood lipids， enhancement of vision， protection of liver， anti-asthma， prevention of atherosclerosis were briefly described， providing a theoretical basis for the development of black rice and black rice anthocyanins.

    黑米也称为血米、乌米，属于稻科植物中长时间培育形成的一种特色品种。黑米稻粒长椭圆，壳灰褐，分籼粳，属非糯性稻米。黑米具有健脾暖肝、明目活血、滋阴补肾等保健功效，在《本草纲目》中也有所记录，因此在民间被称为“珍贡米”或者“药米”[1] ......
