摘 要：近年来，在食品加工过程中违法使用添加剂的案例频发，对公众健康构成了潜在威胁。高效液相色谱-质谱联用技术(High Performance Liquid Chromatography-Mass Spectrometry，HPLC-MS)综合了HPLC的高选择性与MS的高灵敏、高效率的优点，是当前食品检测领域的重要工具之一。该技术在打击违法使用添加剂方面发挥着重要作用，可以更好地服务于食品监管。基于此，本文综述了近年来HPLC-MS在检测食品添加剂中的应用，以期为促进食品行业健康发展提供有益参考。
