摘 要：我国是乳制品生产和消费大国，加强乳制品安全管理不但能促进乳制品行业健康发展，而且事关人们的身体健康和生命安全。本文分析了乳制品微生物污染的来源、类型以及微生物污染对乳制品安全的影响，并提出乳制品微生物污染的防控措施，为乳制品行业的健康发展提供理论支持。

    Abstract： China is a major producer and consumer of dairy products. Strengthening the safety management of dairy products can not only promote the healthy development of the dairy industry， but also affect the health and life safety of the people. This paper analyzes the sources and types of microbial contamination of dairy products and the influence of microbial contamination on the safety of dairy products， and puts forward the prevention and control measures to provide theoretical support for the healthy development of dairy industry.

    乳制品是以牛乳或羊乳以及其加工制品为主要原料，通过加入或不加入适量的维生素、矿物质和其他辅料，按照法律法规和标准规定的条件进行加工制成的各种食品，也被称为奶油制品。乳制品的安全性直接关系到消费者的健康和乳品行业的持续发展。乳制品主要可分为液体乳、乳粉和干酪乳等。其中，液体乳主要有巴氏杀菌乳、灭菌乳、发酵乳和调制乳等，乳粉主要有全脂乳粉、调制乳粉、牛初乳粉和脱脂乳粉等。
