摘 要：目的：建立固相萃取-气相色谱法测定焦糖色素中4-甲基咪唑的方法。方法：样品经Chem Elut硅藻土柱净化富集、二氯甲烷洗脱浓缩，采用DB-1701气相色谱柱，氢火焰离子化检测器测定。结果：4-甲基咪唑在100～500 μg·mL-1具有良好的线性关系，检出限为0.002 mg·mL-1，平均加标回收率在100.2%～100.7%，相对标准偏差为0.2%～0.5%。结论：该方法重现性好，操作简单快速，定量准确，能够满足分析检测的需求，适合在焦糖色素质量控制中使用。
