    Abstract: Objective: To develop a cool and refreshing hard candy for clearing throat by using Dendrobium fcinale and other Homology of medicine and food.Method: In this study,compound extracts of Dendrobium fficinale,iratiagrosvenorii,Scapium wallichii,Lonicera japonicaandGlycyrrhiza uralensis wereetracted and concentrated.On the basis of single factor test results,orthogonal test was used to investigate the effects of the concentration of Dendrobium offcinale extract,sucrose,maltose syrupand water on the taste and formabilityof hard candies.
